If you are interested in an introduction to the Greek text of the Apostolic Fathers, it looks like GlossHouse will be publishing Greek Readers for the works within the corpus. My contributions to the project will be published in the collection of Ignatius’ letters (Smyraeans) and 1 Clement. The publication of the series came as a bit of a surprise to me. Initially, the project architects started without aims at publication, but, shortly thereafter, things changed! You can read all about the project and the methodology we are using here.
